Hi friends! I have been raving about roasting tomatoes for a while now, and the pan roasting method I am going to show you is glorious because not only is it quick and simple to make but it brings out the most exquisite, almost perfect caramelized sweetness in the tomatoes you will love + herbs really complement the juicy, sweet tomatoes.
These pan roasted tomatoes with herbs are excellent served warm with dinner, and any leftovers can be reheated + extremely tasty at room temperature when added to a salad!
Pan Roasted Garlic + Rosemary Tomatoes
Prep Time: 5 minutes | Cook Time: 25 minutes
+ 6 Tomatoes
+ Juice from Half a Lemon
+ 4 Cloves of Garlic, chopped or Garlic Powder
+ 1 Sprig Rosemary
+ 1 teaspoon Extra Virgin Olive oil
+ Salt & Pepper
How to Make!
+ Add some extra virgin olive oil (1 teaspoon) in a medium nonstick skillet over low-medium heat and add garlic powder or chopped garlic cloves.
+ Cut the tomatoes in half lengthwise and place them, cut side down to allow the tomatoes to soak up the oil, on the heated grill pan.
+ Add the lemon juice, season the tomatoes with salt and pepper to taste and cover with a tight lid.
Tips: To prevent scratching and scraping on the nonstick surface of your pan, stick to wooden spoons and heatproof silicone spoons and spatulas. Stay away from metal tongs and silverware, etc.
+ Add herbs chopped or whole and cook each side for 10 minutes. Try not to uncovered them until you notice they are just tender and the undersides are darkened just enough. As you may see on the picture above I like mine a bit more on the burnt side, but that is completely up to you. You will know the tomatoes are ready when they begin to blister and peel. Turn off the heat and let them sit for about 5 minutes and Enjoy!
Five things to make with roasted tomatoes!
+Toss the roasted tomatoes in with any salad.
+ Add the roasted tomatoes to any pasta dish, or you can even make your own marinade pasta sauce.
+You can get fancy and make a delicious BLT or grilled cheese sandwich.
+ You can make chicken Parmesan by topping the grilled chicken with roasted tomatoes and fresh mozzarella and baking just until the cheese melts.
+ You can make any type of Roasted Tomato Soup, I like adding basil.
